Pomegranate molasses tomato salad is a tangy-salty Iraqi dish made by tossing salted and drained tomatoes with red onion, parsley, pomegranate molasses and sumac. The long resting time lets the flavours meld together and makes the salad well suited to carrying in a picnic container.
Dice the tomatoes and thinly slice the red onion into half-moons.
Toss the diced tomatoes with salt and set them in a colander, letting them drain for 30 minutes; this stops the salad from turning watery.
Put the drained tomatoes in a bowl with the onion and parsley.
Add the pomegranate molasses, sumac, olive oil and remaining salt, and toss to combine.
Rest the salad in the fridge for at least 60 minutes so the flavours meld, then transfer it to a picnic container to serve.
If you skip salting and draining the tomatoes first, the salad will turn watery quickly. When carrying it on a picnic, we recommend using a leak-proof lid.
If you cannot find pomegranate molasses, lemon juice with a pinch of sugar creates a similar sweet-sour balance; the colour will be lighter but the flavour balance holds.
