A classic of the Filipino breakfast table, sinangag is made by quickly frying day-old rice in garlicky oil. This version adds shrimp for a heartier, more indulgent dish, finished with airfryer garlic chips for crunch.

How to make it?

Make the garlic chips

Toss the thinly sliced garlic with a teaspoon of the oil and spread in the airfryer basket, frying at medium heat for about 4 minutes, until golden.

Sauté the shrimp

Sauté the shrimp in half the remaining oil for about 3 minutes, until pink, then set aside.

Fry the rice

In the remaining oil, fry the chilled rice with the soy sauce over high heat for 5 minutes, until grainy and separated.

Combine and serve

Fold the shrimp into the rice and finish with the crispy garlic chips and spring onion before serving.

Reminder

The rice must be cooked the day before and chilled; freshly cooked hot rice clumps and sticks in the pan. Allergens: contains shellfish (shrimp).
