Prepare the cauliflower
10 minBreak the cauliflower into small florets and wash them.
Made by blanching cauliflower florets to just the right point and jarring them in a vinegar brine, this pickle contains no sugar, making it a diabetic-friendly way to preserve for winter. Watching the blanching time closely is the key to keeping its crunch.
Break the cauliflower into small florets and wash them.
Blanch the florets in boiling water for exactly 3 minutes, then plunge them straight into ice water; going over this time and they lose their crunch.
Boil the vinegar, water, salt, peppercorns, bay leaf and mustard seed together in a pot to make the brine.
Pack the cooled cauliflower florets and peeled garlic cloves into clean jars, then pour the boiling brine over them.
Store the jars in a cool, dark place for at least 2 weeks; the flavor fully settles in during this time.
Never extend the blanching time; cauliflower boiled past 3 minutes stays soft in the pickle and never regains its crunch.
If you can't find mustard seeds, you can leave them out; it changes the flavor slightly but won't spoil the result.
