A classic of the English breakfast table, kedgeree turns low-carb and dairy-free when riced cauliflower stands in for rice. Smoked fish and boiled egg make it a nourishing meal for kids.

How to make it?

Boil the eggs

Boil the eggs in boiling water for 8 minutes, then transfer to cold water, peel and quarter them.

Sauté the cauliflower

Heat the olive oil in a pan, stir in the curry powder, add the riced cauliflower and sauté over high heat for 8 minutes.

Fold in the smoked fish

Add the smoked salmon and salt, and stir-heat for 2 minutes.

Serve

Arrange the boiled egg quarters on top, drizzle with lemon juice and finish with parsley.

Reminder

Keep the heat high when the cauliflower goes into the pan so it does not release too much water; low heat turns it mushy. Allergens: contains egg and fish (smoked salmon).
