Boil the water and sugar, stirring until the sugar dissolves.
Cook the apricot halves in the syrup over low heat for five to six minutes so they keep their shape.
Fill sterilized jars with the apricots along with their syrup, optionally adding a clove to each jar.
Close the lids and sterilize the jars by boiling them in a pot of water for ten minutes.
Let the jars cool completely, then store in a cool, dark place.
Important: Don't choose overly ripe apricots, as very soft fruit will fall apart during cooking. Jars must be sterilized in boiling water and the syrup must fully cover the apricots. Refrigerate after opening and consume soon.
Leaving the apricots halved and placing a clove in the pit hollow gives the preserve a light, elegant spice note.
