A yeasted dough is brushed with oil, folded into layers and enriched with pepper flakes and black pepper, making a spicy version of kattama, the layered flatbread of Kazakh cuisine, pan-cooked.

Cover the dough and let it rest for 20 minutes.
Roll the dough thin, brush with oil and sprinkle with pepper flakes and black pepper, roll it up, coil it into a spiral and flatten again.
Cook the dough in a wide, covered pan over low heat until golden on both sides, about 13 minutes total.
Do not stretch the dough too much while rolling the layers, or they will stick together and disappear. Allergens: contains gluten (flour).
If you want less heat, you can halve the amount of pepper flakes; the layered texture stays the same.
