Kete, a traditional pastry from Central Anatolian cuisine, is filled with a walnut-and-sugar filling and baked in the oven. With its layered, lightly sweet texture, it's a favorite alongside tea.
Mix the yogurt, melted butter, sugar, baking powder and salt, then gradually add flour, kneading into a soft dough that doesn't stick to your hands.
Cover the dough and let it rest at room temperature for 20 minutes.
Mix the chopped walnuts with sugar and cinnamon to prepare the filling.
Pinch off pieces of dough and roll into rounds, place the filling in the center, close and press gently.
Brush with egg yolk and bake in a preheated 180-degree oven until golden brown.
Important: Don't add too much extra flour while kneading the dough, or the kete's texture will turn tough. Allergen: contains wheat (gluten), dairy, and walnut (nuts).
If you add a pinch of cinnamon to the filling, you'll notice the traditional aroma of the keten more distinctly.
