A festival table staple in Iraq, kleicha is made by filling mahlep and cardamom-spiced dough with date paste, pressing it into a decorative mould and baking. Its dairy-free dough makes it suitable for a wide range of guests.

How to make it?

Knead the dough

45 min

Mix the flour, sunflower oil, sugar, instant dry yeast, mahlab and cardamom in a bowl. Add the lukewarm water and knead into a soft dough, then let it prove for 45 minutes.

Fill and shape

15 min

Divide the dough into small balls, add date paste to the centre, seal and press with a decorative mould to shape.

Bake

25 min

Bake in an oven preheated to 180°C for 25 minutes until golden.

Reminder

Don't press the dough too thin with the mould, or the date paste may leak out. Allergens: contains wheat (gluten).

If you can't find date paste, soften dried dates in hot water and blend them into a purée yourself.
