Knead the dough
10 minDissolve the fresh yeast in the lukewarm water with the sugar, then add the flour, salt and olive oil and knead for 10 minutes until the dough is elastic.
A morning staple of Thessaloniki's streets, koulouri is a yeasted dough shaped into rings, dipped in a grape-syrup wash and coated thickly in sesame. Baking gives it a crisp shell and a slightly chewy centre.

Place the dough in an oiled bowl, cover it and leave it somewhere warm for 60 minutes until it doubles in size.
Divide the dough into 10 pieces, roll each into a thin rope and join the ends to form a ring. Dip each ring in the syrup, then coat immediately in sesame.
Space the rings out on a baking tray and bake in an oven preheated to 200°C for 15 minutes until golden and crisp.
Do not let the dough rise somewhere cold, or the rings will not puff up properly in the oven. Allergens: contains wheat (gluten), sesame.
Lightly toasting the sesame before coating gives it a deeper, nuttier flavour once baked, though a very brief toast is enough to avoid burning it.
