Mutabbel mashes smoke-roasted eggplant with tahini, strained yoghurt and garlic, standing out among Saudi meze for its smoky flavour. It packs easily into a picnic box and fits low-carb or keto eating.

How to make it?

Char the eggplant

Char the eggplants directly over the stovetop flame, turning until the skin blackens all over, then peel once cool enough to handle.

Mash and mix

Mash the eggplant flesh with a fork and mix in the tahini, strained yoghurt, garlic, lemon juice and salt.

Garnish and serve

Spread on a plate, drizzle with olive oil, and garnish with the pine nuts and pomegranate seeds before serving.

Reminder

If the eggplant is not charred enough, you lose the smoky flavour, so make sure to scrape off the darker bits while peeling. Allergens: contains sesame, dairy and tree nuts (pine nuts).
