Sauté the thinly sliced leek in butter over low heat for 8-10 minutes until softened.
Sprinkle the flour over the leek and sauté for 1 minute, then add the milk gradually while stirring constantly; once thickened, add the cheddar and melt it, then season with salt, black pepper and nutmeg.
Toss the boiled pasta with the sauce and serve hot.
Important: When washing the leek, clean the soil between the leaves thoroughly — sand can remain between the layers. Cook the sauce on low heat; high heat can cause the milk to curdle. Allergen: contains dairy and wheat (gluten).
If you thinly slice the leek's dark green part and add it to the boiling water instead of throwing it away, you reduce waste and it adds a subtle aroma too.
