A beloved Iraqi snack, kubbeh wraps a fine bulgur-and-beef shell around a savoury filling of ground beef, walnuts and mint. Using an airfryer instead of deep-frying gives the same crisp shell with far less oil. With no added sugar in the filling, it also works well for anyone looking for a diabetes-friendly snack.

In a pan, brown the filling portion of the ground beef with the finely chopped onion, then stir in the chopped walnuts, red pepper flakes, dried mint and salt and let the mixture cool.
Take walnut-sized pieces of the shell dough, hollow them out in your palm, fill each with a teaspoon of the filling and seal, shaping into an oval croquette.
Arrange the croquettes in a lightly oiled airfryer basket and cook until the surface browns and the shell firms up, shaking the basket partway through so they cook evenly.
Keep the shell thin while shaping; a thick shell browns on the outside before the inside cooks through in the airfryer. Allergens: contains gluten (bulgur, flour) and tree nuts (walnut).
You can freeze the shaped raw croquettes on a tray and bag them up; cook straight from frozen in the airfryer and simply add 5 minutes to the time.
