This sun-dried tomato preserve is a practical jar made by softening ready-dried tomatoes in warm water and vinegar, then packing them into extra virgin olive oil with garlic and basil. It comes to the table alongside a cheese board or spooned over crisp slices as a quick snack.

Dry the tomatoes thoroughly before packing them into the jar; any leftover water can cause mould to form in the oil. Keep the jar in the fridge and make sure the tomatoes always stay fully submerged under the oil.
Do not leave the jar at room temperature; an anaerobic environment can form in the oil. Refrigeration is essential, and it is best eaten within two weeks.
