Mussel pilaki, prepared by slow-cooking mussels with onion, carrot, and olive oil and serving cold, is one of the classic flavors of Aegean and Marmara meze tables. This recipe, whose flavor deepens as it rests, can easily be prepared ahead of time for guest tables.
Sauté the onion in olive oil until translucent, add the garlic and carrot and continue sautéing for a few more minutes.
Add the cleaned mussel meat, potatoes, sugar and salt, then add enough hot water to cover.
Cover with a lid and cook over low heat until the potatoes are tender and the water has been absorbed.
Let the pilaki cool to room temperature after removing from heat, then cover and let it rest in the refrigerator. Important: pilaki is served cold, its flavor doesn't fully come together while warm.
Garnish the cooled pilaki with chopped parsley and serve with lemon slices.
Important: Pilaki's flavor comes out after it cools and rests for a few hours; prepare it at least 2 hours before serving and let it rest in the refrigerator. Allergen: contains shellfish (mussels).
If you add a few drops of lemon juice to the pilaki right before serving, it balances the heaviness of the olive oil and makes the dish fresher.
