A simple winter preserve made by boiling kernels stripped from fresh corn cobs in lightly salted water and storing them in sterile jars. It adds a slightly sweet texture to salads, soups, and pilafs even out of season.

Blanch the corn kernels in boiling salted water for four to five minutes.
Drain the blanched kernels, pack into sterilized jars, and add lightly salted boiling water on top.
Seal the jars and sterilize by boiling them in a pot filled with water for ten minutes.
Let the jars cool completely, then store in a cool, dark place.
Important: use the knife carefully when separating the corn kernels from the cob, there's a risk of cutting your hand. Jars must be sterilized in boiling water; if the lid doesn't fully seal, the preserve can spoil. Store it in the refrigerator after opening and consume within a few days.
Adding a pinch of sugar to the corn kernels' blanching water brings out their natural sweetness; this addition is optional. Drying the cobs thoroughly before removing the kernels makes cutting them without splattering easier.
