This traditional halva contains no dairy — it's made by loosening starch with water, stirring in molasses and cooking over heat until it turns a deep brown. Getting the right consistency takes real skill; once cooled, it can be sliced and frozen for a long time.

How to make it?

Loosen the starch

Mix the cornstarch with the cold water and a pinch of salt until it forms a lump-free slurry.

Simmer

15 min

Cook the slurry over low heat, stirring constantly, for 15 minutes until it thickens.

Add the molasses

35 min

Stir in the molasses and keep cooking for 35 minutes, until the mixture turns deep brown and starts pulling away from the sides of the pan.

Pour into a mould

Pour the hot mixture into a greased mould.

Cool

60 min

Leave to cool at room temperature for at least 60 minutes, then slice.

Reminder

Stir the mixture constantly as it cooks — if it catches on the bottom, the burnt taste spreads through the whole batch.

Using honey instead of molasses gives a lighter colour and milder flavour; just shorten the cooking time by 5 minutes.

Pekmez yerine biraz daha az tatlı bir karışım denemek istedim ama sonuç yeterince koyu renk almadı; bir dahaki sefere pekmez miktarını biraz daha artırıp yeniden deneyeceğim.

Tarifte 35 dakika kavurma yazıyor ama benim karışımım 45 dakikada istenen koyulaşmaya ulaştı; ocağım orta ateşte biraz zayıf kalıyor olabilir, bir dahaki sefere ateşi biraz daha açacağım.
