Beet greens pickle is a waste-free Turkish preserve made by jarring the leaves usually thrown away in a vinegar brine. The leaves turn tangy quickly, adding a fresh green note to winter tables.

How to make it?

Blanch the leaves

Blanch the beet greens in boiling water for 2 minutes, drain and rinse under cold water.

Make the brine

Bring the vinegar, water and salt to a boil, simmer for 5 minutes, then remove from the heat.

Jar the pickle

10 min

Pack the blanched leaves into clean jars with the garlic, pour the fully cooled brine over them and seal the lids.

Reminder

Do not overboil the leaves, or they will turn spongy in the pickle. Let the brine cool completely before sealing the jars. Allergens: this recipe contains none of the main allergen groups.

Turşuyu servise hazır hale getirmek için en az kaç saat buzdolabında bekletmem gerekiyor, örneğin 24 saat yeterli olur mu yoksa kavanozladıktan hemen sonra da tüketilebilir mi?
