Small Brazilian-style cheese bread balls, naturally gluten-free since they're made with tapioca flour, with a slightly crisp exterior and a chewy, elastic interior. Served hot for breakfast or as a snack.

How to make it?

Boil the liquids

Bring the milk, olive oil, and salt to a boil in a pot.

Scald the flour

Pour the hot liquid mixture over the tapioca flour and stir until you get a sticky, smooth dough; let the dough cool down.

Add the eggs and cheese

Once the dough has cooled, add the eggs one by one, then the grated cheese last, kneading until you get a uniform mixture.

Shape and bake

Shape the dough into small balls and arrange with space between them on a parchment-lined tray, then bake in a preheated oven until lightly browned on the outside.

Reminder

Important: Don't open the oven door often while the dough bakes; sudden temperature changes may prevent the insides of the balls from puffing up properly. Allergen: contains dairy products and egg; doesn't contain wheat, but cross-contamination may occur.
