Inherited from Malaysia's Chinese communities, pau are soft steamed buns made from a yeasted dough with no added fat during cooking. Needing no frying or baking, they make a light choice for breakfast tables and packed lunches.

How to make it?

Knead the dough

Mix the flour, sugar, instant dry yeast, baking powder and salt in a bowl. Add the lukewarm water and sunflower oil and knead into a smooth dough, then let it prove for 45 minutes.

Shape the buns

15 min

Divide the proved dough into eight equal pieces and roll into balls, placing a small square of baking paper under each, then rest for another 15 minutes.

Steam

15 min

Steam the pau buns in a covered steamer over high heat for 15 minutes, checking occasionally without lifting the lid too much.

Reminder

Don't lift the steamer lid too often while cooking, or the buns will wrinkle on top. Allergens: contains wheat (gluten).

If you don't have a steamer, setting a perforated colander over boiling water and covering it gives a similar result.

Tarifte buharda pişirme süresi 15 dakika yazıyor, ben yüksek ateşte tam 15 dakikada denedim ve pauların üzeri hiç buruşmadı, kabarık çıktı. Tek fark hamuru 45 dakika yerine 55 dakika mayalandırdığımda daha da yumuşak oldu.
