Perepichka, the legendary street snack of Kyiv's metro stations, wraps a beef sausage in a garlicky, chilli-spiced dough that puffs up when deep-fried. Quick to make, this spicy bite is eaten hot, straight from the hand.

How to make it?

Make the dough

Mix the flour, baking powder and salt, add the water and egg, then work in the crushed garlic, chilli flakes and paprika until you have a soft, non-sticky dough.

Wrap the sausages

Pinch off pieces of dough, tuck a beef sausage into each and pinch the ends firmly closed.

Fry

8 min

Deep-fry the wrapped dough in hot oil for 8 minutes, turning occasionally, until golden and puffed.

Reminder

If the oil is not hot enough, the dough soaks up oil and turns heavy, so drop in a small piece of dough first and make sure it bubbles and rises straight to the surface. Allergens: contains wheat (gluten), egg.

Leave out the chilli flakes and add cumin instead for a milder spiced version; using beef sucuk instead of beef sausage is a tasty alternative too.

Dana sosis bulamadığım için editör notundaki gibi dana sucukla denedim, hamurun içinde biraz daha yağlı ve baharatlı bir dolgu oldu ama gerçekten çok lezzetliydi. Pul biberi de biraz azalttım çünkü sucuk zaten kendi baharatını taşıyor.
