Pişi, made by rolling out small pieces of yeasted dough and frying them in hot oil, is a practical breakfast treat with its hollow, fluffy texture. It's served hot with honey, molasses, or jam.

How to make it?

Activate the yeast

Add fresh yeast and sugar to lukewarm water, cover and let it foam for 10 minutes.

Knead the dough

15 min

Add yogurt, flour, baking powder and salt and knead into a soft dough that sticks lightly to your hands.

Let it rise

45 min

Cover the dough and let it rise in a warm place until doubled in size.

Shape and fry

20 min

Pinch off pieces of dough and flatten with your hands, then fry in hot oil until golden brown on both sides. Caution: if the oil is too hot, the outside may brown quickly while the inside stays doughy — fry over medium heat.

Reminder

Important: Keep the oil at medium temperature, or the pastries can brown quickly on the outside while staying doughy inside. Allergens: contains wheat (gluten), milk and dairy.

Rolling the dough thin in the center and leaving the edges a bit thicker lets the pişi puff up more nicely while frying.
