A staple of everyday Portuguese home cooking, frango guisado is made by quickly pressure-cooking skinless chicken thighs with tomato and bell pepper. Being starch-free and light, this stew fits both a ketogenic and a lower-calorie diet.

Step by Step

How to make it?

1

Sauté the onion and garlic

3 min

Sauté the onion in olive oil in the pressure cooker until translucent, then add the garlic cloves.

2

Add the vegetables

3 min

Add the chopped bell pepper and tomatoes and sauté for 3 more minutes.

3

Pressure cook

15 min

Add the chicken thighs, bay leaf, pepper flakes, salt and black pepper, then seal the lid. Once the cooker reaches pressure, cook for 15 minutes and let the pressure release naturally.

4

Reduce the sauce and serve

5 min

After opening the lid, simmer uncovered for 5 more minutes to reduce the sauce, then serve hot.

Reminder

Be sure to remove the chicken skin, or the stew becomes fatty and loses its lower-calorie character.

Editor's Note Editörün Notu

Using a teaspoon of sweet paprika instead of the pepper flakes gives the stew a milder flavour, a good option for those who don't like heat.
