Marinate
20 minRub the beef tenderloin slices with crushed garlic, olive oil, bay leaf, salt and pepper, then chill for 20 minutes.
One of Portugal's street food favourites, prego no pão is made by marinating thin beef steak with garlic and cooking it quickly in the air fryer before tucking it into whole-grain bread. With a low-sugar mustard, it suits anyone watching their blood sugar.
Rub the beef tenderloin slices with crushed garlic, olive oil, bay leaf, salt and pepper, then chill for 20 minutes.
Cook the marinated steak in a preheated air fryer at 200°C for about 3 minutes per side, 6 minutes in total. If you don't have an air fryer, grill it in an oven preheated to 220°C for the same time.
Spread a thin layer of mustard on the whole-grain bread slices, tuck the cooked steak between them and serve hot.
Don't overcook the steak — thin slices toughen up fast. Allergens: contains gluten (bread).
Using a beef chop instead of tenderloin means adding 2 minutes to the cooking time, depending on thickness.
