Knead the dough
10 minKnead the flour, salt, water and a bit of the oil into a very soft dough.
Coming from Saudi Arabia's Bedouin kitchens, reggag bread is made by stretching an unleavened dough by hand until paper-thin and cooking it on a hot griddle in seconds. Getting it this thin takes years of practice; once mastered, it can be stacked and frozen in layers.
Knead the flour, salt, water and a bit of the oil into a very soft dough.
Wrap the dough and let it rest at room temperature for 20 minutes.
Divide the dough into small balls.
Stretch each ball by hand until paper-thin and cook on a hot griddle for 20 seconds per side.
Don't worry if the dough tears while stretching — you can easily press it back together with your fingertips. Allergens: contains gluten (flour).
If you don't have a griddle, a wide flat pan gives a similar result — just keep the heat a bit lower.
