A staple of Anatolian village tables, this dough dish is made by rolling an unleavened dough thin and cooking it on a hot griddle. Since it freezes well, it can be made in batches and thawed as needed.

How to make it?

Knead the dough

Knead the flour, water and salt into a smooth dough.

Let it rest

Let the dough rest for five minutes.

Roll and cook

15 min

Roll the dough into a thin round and cook on a hot griddle for fifteen minutes, until both sides puff up.

Reminder

If the griddle is too hot, the bread can burn quickly; keep the heat at a medium level. Allergens: contains gluten (flour).

If you do not have a griddle, a wide cast-iron pan gives a similar result, though it puffs up a little less.

Sacım olmadığı için döküm tavada denedim, editörün dediği gibi kabarması biraz daha azdı ama yine de lezzeti köyde yediğim ekmeğe çok yakındı. Dondurucuda bir hafta bekleyeni de gayet iyi çözüldü.
