A staple of Anatolian village tables, this dough dish is made by rolling an unleavened dough thin and cooking it on a hot griddle. Since it freezes well, it can be made in batches and thawed as needed.

Let the dough rest for five minutes.
Roll the dough into a thin round and cook on a hot griddle for fifteen minutes, until both sides puff up.
If the griddle is too hot, the bread can burn quickly; keep the heat at a medium level. Allergens: contains gluten (flour).
If you do not have a griddle, a wide cast-iron pan gives a similar result, though it puffs up a little less.
