Marinate

Combine the cleaned sardines with olive oil, lemon juice, thyme, salt, and black pepper, and let rest for 15 minutes.

Cook the sardines on a hot grill for 2-3 minutes on each side.

Serve hot with lemon slices.

Reminder

Important: Sardines are small and thin, so they shouldn't stay on the grill for more than 2-3 minutes, otherwise they can dry out. Allergen: contains only fish. Caution: don't place the fish on the grill grate before it's fully heated, otherwise the skins can stick and tear.

If you add a few garlic slices alongside the thyme while marinating the sardines, you give the dish a deeper aroma. Draining excess marinade liquid before putting the fish on the grill reduces smoking.
