Shrak, Jordan's Bedouin-rooted flatbread, is made by hand-stretching an unleavened dough until almost see-through and cooking it in seconds on a hot dome griddle. Topped here with sardine, chilli flakes and lemon, it becomes a pescatarian, spiced brunch dish.
Knead the flour, water and salt into a very soft, pliable dough.
Cover and rest the dough for 10 minutes so it stretches out more easily.
Divide the dough into small pieces and stretch each one by hand as thin as you can, almost see-through.
Cook the thin dough on a hot griddle or cast-iron pan, turning after a minute on each side, then drizzle with olive oil and chilli flakes.
Arrange the sardine fillets over the cooked flatbreads, sprinkle with sesame seeds, squeeze over the lemon and serve.
If a hole appears while stretching the dough, do not worry, just pinch the edge closed and keep going; shrak is not meant to be a perfect circle by nature. Allergens: contains wheat (gluten), sesame, fish (sardine).
Use anchovy instead of sardine and, since it is saltier, you can cut back the salt in the dough by a pinch; if you cannot find fresh sardine, tinned sardine works just as well.
