Sincronizada is an easy-looking but technique-demanding Mexican snack made by sandwiching kaşar cheese and thin-sliced beef ham between two large wheat tortillas and pan-toasting until golden. Timing it so the cheese melts fully before the tortilla burns takes experience. Making and resting the tortilla dough from scratch is what stretches out the whole process.

How to make it?

Knead and rest the dough

Mix the flour with the salt and olive oil, add the warm water to form a smooth dough, cover and rest for 45 minutes.

Roll out the tortillas

20 min

Divide the dough into eight equal pieces and roll each into a thin round.

Cook the tortillas

12 min

Cook each tortilla in a dry pan for 1 minute per side until lightly coloured, then set aside.

Fill and grill

8 min

Sandwich the kaşar cheese and beef ham between two tortillas and cook over medium heat for 8 minutes until the cheese melts.

Reminder

Turn the tortilla over medium heat; high heat burns the outside before the cheese inside has melted. Allergens: contains gluten (flour) and milk and dairy (kaşar cheese).

Tortillayı yüksek ateşte pişirdim, dışı 2 dakikada kararırken içindeki kaşar peyniri hiç erimedi, tarifte önerilen orta ateşte 8 dakikalık pişirme süresini dinlemeliydim, aksi hâlde kaşar peyniri hiç yumuşamıyor.
