Small whole dry onions dropped straight into a vinegar brine make this pickle, a low-effort recipe that sours on its own in the jar over time. It gives a sharp bite alongside grilled meats or a pot of beans.

How to make it?

Peel the onions

Peel the small onions and leave them whole, halving any larger ones.

Prepare the brine

Mix the vinegar, water, salt and sugar without bringing to a boil, and stir in the peppercorns.

Jar and let it pickle

Pack the onions into the jar, pour the brine over, seal and leave in a cool spot for at least 1 week.

Reminder

Chill the onions in the fridge for a few minutes before peeling — it cuts down on eye-watering.
