A no-ferment quick pickle from Japan, sokuseki-zuke is made by rubbing thinly sliced cucumber with salt and letting it sit for a few minutes. A finish of vinegar and sesame brings it to the table within minutes.

How to make it?

Salt the cucumber

Place the thinly sliced cucumber in a bowl and massage it with the salt.

Drain the liquid

After 5 minutes, gently squeeze the cucumber by hand to drain off the excess liquid.

Toss and serve

Toss the drained cucumber with the vinegar and sugar, sprinkle with sesame and serve right away.

Reminder

After salting the cucumber, massage it gently with your hands, or it will not release enough liquid and the pickle loses its crunch. Allergens: contains sesame.
