Solterito, a traditional salad from Arequipa, brings together boiled fava beans, corn and tomato dressed with lime juice, making it a natural way to use up leftover cooked beans and corn. Finished with heart-healthy olive oil and a little cheese, it makes a light yet filling starter.

Prepare the fava beans

Peel the outer skin off each boiled fava bean; this step makes a real difference to the salad's texture.

Dice the vegetables

Dice the tomato, red onion and cheese into small cubes and place them in a large bowl together with the corn and peeled fava beans.

Dress and toss

Whisk the lime juice, olive oil, salt and pepper in a separate bowl and drizzle over the salad; toss gently and serve right away.

Reminder

Peeling the outer skin off each fava bean takes a little time but makes a real difference to the texture; skip it and the salad stays noticeably firmer. Allergens: contains milk and dairy (cheese).

Kırmızı soğanı çok ince doğramadığım için salatada baskın kaldı, bir dahaki sefere kağıt inceliğinde dilimlemem gerekiyor. Peynir ve limon dengesi güzeldi, sadece soğan yüzünden ilk lokmalarda tadı biraz bastırdı.

Önceki akşamdan artan haşlanmış mısır ve baklayla yaptım, 15 dakikada sofraya geldi. Baklanın kabuğunu soymak biraz uğraştırdı ama sonuç gerçekten daha yumuşak bir doku verdi.
