Sopes are colourful Mexican bites made from small boat-shaped thick corn masa bases with pinched-up edges, topped with mashed beans, cheese and charred vegetables. Preparing each component separately takes time, but the result is perfect for a crowd.

How to make it?

Make the dough

15 min

Mix the corn flour with salt and gradually knead in the hot water, divide the dough into 8 equal balls and rest for 15 minutes.

Shape the boats

25 min

Flatten each ball into a 1 cm thick disc, lightly cook both sides for 2 minutes in a dry pan, then pinch the edges upward with your fingers to form a boat shape.

Fry the boats

15 min

Heat the vegetable oil in the pan and fry the boats for 6-7 minutes, until the bases turn golden and crisp.

Fill and serve

10 min

Fill the fried boats with mashed kidney beans, top with the onion, tomato, white cheese and lettuce, and serve right away.

Reminder

If the pinched edges of the masa boats are too thin, they crack during frying; keep the edge at least 1 cm thick. Allergens: contains milk and dairy.
