Shopska salad is one of the best-known salads of Balkan cooking, made by tossing coarsely chopped tomato, cucumber and green pepper and finishing with a generous layer of grated white cheese. Lightly salting and resting the vegetables before adding the cheese keeps the salad from releasing its water too soon.

How to make it?

Chop the vegetables

Coarsely chop the tomato, cucumber, green pepper and red onion, and put them in a bowl.

Rest

Sprinkle with salt, let it rest for 10 minutes, and drain off the excess liquid.

Add the olive oil

Drizzle with olive oil and toss gently.

Add the cheese

Transfer to a serving plate and generously scatter the grated white cheese over the top before serving.

Reminder

Grate the cheese right before serving, cheese grated ahead of time dries out and clumps. Allergens: contains milk and dairy.
