A Ukrainian snack that repurposes leftover stale bread, sukhari is made by frying rye bread in garlic-infused oil until the outside is crisp and the inside stays soft. It is shared in a big bowl at large gatherings.

How to make it?

Prepare the bread

Cut the stale rye bread into finger-sized pieces.

Infuse the garlic oil

5 min

Let the crushed garlic infuse into the olive oil over very low heat for 5 minutes; the garlic should release its aroma into the oil without browning.

Fry the bread

12 min

Add the bread pieces to the garlic oil and fry over medium heat, turning constantly, for 12 minutes until the outside is crisp and the inside stays soft; sprinkle with salt.

Serve

Garnish with chopped dill and bring to the table in a big bowl for everyone to share.

Reminder

If you overheat the garlic in the oil it turns bitter; the oil should be pulled back slightly from high heat before you add the bread. Allergens: contains wheat (gluten).
