A pickle that accompanies breakfast and late-night snack spreads across Gulf kitchens, this is made by briefly softening spring onions in the pressure cooker and letting them rest in a vinegar brine. With economical ingredients, it can be made easily any time of year.

How to make it?

Soften the spring onions in the pressure cooker

Put the trimmed spring onions and garlic cloves into the pressure cooker with a little water and close the lid. Turn off the heat the moment it reaches pressure.

Make the brine

Bring the vinegar, water, salt, sugar and bay leaf to a boil in a pan, stirring until the salt and sugar dissolve.

Jar and rest

90 min

Once the pressure has released on its own, pack the spring onions into a clean jar and pour the hot brine over them. Seal and let rest in the fridge.

Reminder

Turn off the heat the moment the pressure cooker reaches pressure when cooking the spring onions; overcooking gives them a mushy texture and they will not stay crisp in the pickle.
