A thin yeasted dough is filled with drained tuna, tomato and onion and baked, making a cheese-free pide that fits a pescatarian diet.
Knead the flour with the lukewarm water and dry yeast into a soft dough.
Cover the dough and let it rise for 25 minutes.
Mix the drained tuna with the chopped tomato, onion and olive oil.
Roll the dough into a boat shape, fold the edges, and spread the filling in the middle.
Bake in an oven preheated to 220°C for 20 minutes, until the edges turn golden.
Drain the tuna thoroughly, or the dough may get soggy and undercook. Allergens: contains gluten (flour), fish (tuna).
Cooked salmon flakes can be used instead of tuna; the flavour will be a touch richer.
