Made by tossing finely shredded cabbage with garlic, coriander and a vinegar brine for a short cure, torshi-ye kalam is a sharp, crunchy pickle served alongside main dishes in Iran. It is ready to eat within a few days, with no long fermentation needed.
Pack the cabbage, carrot, garlic and coriander into a wide jar.
Bring the vinegar, water, salt and cumin seeds to the boil in a pot.
Pour the boiling brine over the vegetables, making sure they are fully submerged. Seal the jar and leave to cool at room temperature for one hour.
Transfer the jar to the fridge and let it cure for at least two days before serving.
Pour the brine over the cabbage while still hot; a lukewarm brine will not keep the cabbage crunchy. Store the jar in the fridge and start eating it within two days.
