Ukraine's miniature dumpling, vushka, takes its name from its small ear-shaped fold. Rolling the dough thin and folding each piece by hand around a mushroom filling takes mastery, and the result can also be packed cold for a picnic.

How to make it?

Make the dough

Knead the flour, water, egg and salt into an elastic dough.

Let it rest

15 min

Wrap the dough and let it rest at room temperature for 15 minutes.

Prepare the filling

8 min

Sauté the mushroom with the onion in olive oil until soft, then finish with black pepper.

Fold the dumplings

12 min

Roll the dough thin and cut into small squares, place a little filling in the centre of each, fold into a triangle and pinch the two ends together to form the ear shape.

Boil

5 min

Boil in salted water for 5 minutes, then drain.

Reminder

Always let the dough rest before rolling it; unrested dough isn't elastic and tears while folding. Allergens: contains wheat (gluten) and egg.

Using dried mushrooms instead of fresh gives a more intense flavour; in that case you'll need to soak the dried mushrooms in warm water for 20 minutes and drain them first.
