Jordanian spicy za'atar bread is made by topping yeasted dough with a mixture of za'atar, olive oil and hot pepper flakes and baking it. The added chili gives this twist on classic za'atar bread a distinct kick.

How to make it?

Proof the dough

Dissolve the fresh yeast in the lukewarm water and let it foam for 10 minutes, then knead into the salted flour to form a soft dough. Cover and let it rise in a warm spot until doubled, about 70 minutes.

Prepare the topping and spread

10 min

Mix the za'atar, olive oil and hot pepper flakes. Divide the dough into small pieces, roll thin, and spread a thin layer of the mixture over each.

Bake

15 min

Bake in an oven preheated to 220°C for 15 minutes until the edges are lightly browned.

Reminder

Roll the dough thin, or a thick base will bake with a raw centre. Do not spread the za'atar mixture too thick, or it will scorch and turn bitter. Allergens: contains gluten (wheat flour), sesame (in the za'atar).
