A simple German cookie, haferkekse is made by kneading rolled oats with honey and olive oil before baking. Using olive oil instead of the solid fat in the classic recipe turns this into a heart-healthy snack.

How to make it?

Make the dough

Whisk the olive oil, honey and egg together, then add the oats, flour, cinnamon, baking powder and salt and knead.

Shape the cookies

Shape the dough into flat rounds and arrange them on a baking tray.

Bake

Bake in an oven preheated to 170°C for eighteen minutes, until the edges turn lightly golden.

Reminder

Do not remove the cookies from the tray right away; they are fragile while hot, so let them cool on the tray for a few minutes first. Allergens: contains gluten (flour) and egg.

If you swap the honey for a plant-based sweetener, the cookies come out slightly less moist; you can add a few drops of water to keep the texture right.
