Drain the cooked yellow split peas thoroughly through a sieve.
Blend the drained split peas with the onion, garlic, olive oil, lemon juice and salt until smooth.
Chill the purée in the fridge for at least 1 hour and serve topped with finely chopped red onion.
Important: drain the split peas completely after straining, or the purée turns watery and loses its consistency.
If the purée turns out too thick, you can loosen it with a few spoonfuls of the split peas' own cooking liquid; adding it before blending makes mixing easier.
