Fava, the yellow split pea purée of Greek meze tables, is made without any cooking by blending pre-cooked yellow split peas with olive oil, lemon juice and onion. It is a practical mezze that packs well into a lunchbox.

How to make it?

Drain the Split Peas

Drain the cooked yellow split peas thoroughly through a sieve.

Blend the Mixture

Blend the drained split peas with the onion, garlic, olive oil, lemon juice and salt until smooth.

Rest and Serve

60 min

Chill the purée in the fridge for at least 1 hour and serve topped with finely chopped red onion.

Reminder

Important: drain the split peas completely after straining, or the purée turns watery and loses its consistency.

If the purée turns out too thick, you can loosen it with a few spoonfuls of the split peas' own cooking liquid; adding it before blending makes mixing easier.
