A classic meze with a slightly sweet, soft texture, in which fresh peas are slow-cooked in olive oil with carrots and onion. Reflecting the freshness of springtime, this simple recipe, served cold, is an essential of olive-oil dishes.

Step by Step

How to make it?

1

Sauté the onion and carrot

8 min

Sauté the onion and carrot in olive oil for a few minutes.

2

Add the peas

3 min

Add the peas, sugar and salt, then add enough hot water to cover.

3

Cook over low heat

20 min

Cover and cook over low heat until the vegetables are tender and most of the water has evaporated.

4

Cool and serve

5 min

Sprinkle with chopped dill and serve once cooled to room temperature.

Reminder

Important: If you can't find fresh peas, frozen peas can also be used, but shorten the cooking time by a few minutes. This meze doesn't contain any specific allergen. Note: don't overdo the sugar — the peas' natural sweetness is already noticeable.

Editor's Note Editörün Notu

If you don't add the peas until the last 5 minutes, they stay firm and don't turn mushy while the other vegetables soften.
