Sauté the onion and carrot in olive oil for a few minutes.
Add the peas, sugar and salt, then add enough hot water to cover.
Cover and cook over low heat until the vegetables are tender and most of the water has evaporated.
Sprinkle with chopped dill and serve once cooled to room temperature.
Important: If you can't find fresh peas, frozen peas can also be used, but shorten the cooking time by a few minutes. This meze doesn't contain any specific allergen. Note: don't overdo the sugar — the peas' natural sweetness is already noticeable.
If you don't add the peas until the last 5 minutes, they stay firm and don't turn mushy while the other vegetables soften.
