Fresh fava beans and artichoke hearts are gently simmered with olive oil, onion and dill to make this cold starter, served alongside grilled meats as a refreshing opener. A squeeze of lemon at serving balances the richer flavours of the grill.

How to make it?

Prepare the vegetables

Shell the fava beans and trim the artichoke hearts, dropping them into lemon water.

Soften the onion

Sauté the finely chopped onion in the olive oil until lightly softened.

Add the fava and artichoke

Add the fava beans, drained artichoke hearts, sugar and salt, pour in enough hot water to just cover, and simmer on low heat until the liquid is absorbed.

Cool and serve

60 min

Once it has cooled to room temperature, chill the dish for at least an hour, then finish with lemon juice and dill before serving.

Reminder

Be sure to peel the tough outer skin off each fava bean, or it will stay tough even after cooking. Drop the artichoke hearts into lemon water as soon as you trim them, or they will darken quickly.

If you cannot find fresh fava beans, frozen ones work too; in that case shorten the cooking time by about 10 minutes.
