A satisfying vegan recipe inspired by Anatolian cuisine, where red lentils simmer in tomato sauce and meet pasta. An economical family meal prepared quickly.

How to make it?

Sauté the onion

Sauté the onion in olive oil until softened and lightly pink.

Cook the lentils

15 min

Add the tomato paste and sauté briefly, then add the washed lentils and water; bring to a boil, then cook over low heat for 15 minutes until the lentils soften.

Add the pasta

10 min

Add the cumin, red pepper flakes, and salt and stir; add the pasta as well and cook over medium heat until the liquid is absorbed and it combines with the lentils.

Serve

Serve the thickened lentil pasta hot; you can optionally drizzle a little more olive oil on top.

Reminder

Important: Make sure the sauce is boiling when you add the lentils, otherwise it can stick to the bottom. Since the wheat pasta contains gluten, it isn't suitable for those on a gluten-free diet.

If you add a pinch of cumin to the sauce, the lentils' flavor becomes even more pronounced, taking on an aroma typical of Anatolian cuisine.
