A naturally sweet, fibrous-tough root obtained from the underground root of the licorice plant. It is the raw material for the traditional licorice sherbet most sold in Turkey during summer.

Licorice root is obtained from the fibrous-tough underground root of the licorice plant (Glycyrrhiza glabra). This plant grows naturally across a wide geography from the Mediterranean to Central Asia; it is also common in the southern regions of Turkey.
A compound in the root called glycyrrhizin is a natural sweetness source perceived as dozens of times sweeter than table sugar. The dried root is used both in traditional sherbet and in some confectionery and pharmaceutical formulations.
