This traditional Ottoman street drink is made by steeping licorice root in water for a long time, resulting in a mildly sweet, earthy aroma. Served cold, this şerbet offers a refreshing alternative in summer heat.

Step by Step

How to make it?

1

Steep the licorice root

720 min

Put the crushed licorice root into a wide container with water, cover, and leave in a cool place for at least 12 hours.

2

Strain and sweeten

10 min

Strain the mixture through a tightly woven cloth, add sugar if desired, and mix.

3

Chill and serve

10 min

Chill the syrup in the refrigerator and serve in glasses filled with ice.

Reminder

Important: Keep the container in a cool spot while the licorice root steeps, as it can start to sour in a warm environment. Caution: use a tightly woven cloth when straining the root pieces, as fine fibers can slip into the glass.
