Colostrum is the thick, nutrient-rich milk given by a cow or ewe in the first days after giving birth. When heated, it separates into cheese-like curds, so it is used to make ağız tatlısı (colostrum pudding) and muhallebi. Since it can only be obtained for a short time, it is seasonal.
