Deveining is the opening and pulling out of the dark-colored digestive tract visible on the back of the shrimp, using a thin knife or a toothpick. This process both provides a visually clean look and removes the gritty texture that can be felt in the mouth from the shrimp. It is generally done after peeling the shell and before cooking.
