Hollandaise is a warm sauce made by whisking egg yolk with melted butter over a bain-marie to form an emulsion. It is one of the five mother sauces of classic French cuisine and has a temperature-sensitive structure prone to breaking. Despite its name, its connection to Holland is not certain.
