Folding

folding · kat-la-ma

hafifçe alttan üste karıştırma

Folding is a light and careful technique used to mix a dense ingredient into a whipped, airy mixture without losing volume. Air loss is minimized by scooping the mixture from underneath and folding it over the top with a spatula. This method is used especially in recipes containing air, such as soufflés and mousses.

Where It's Used

“Gently fold the flour mixture into the beaten egg whites with a spatula.”
